{"id":3204,"date":"2020-03-08T15:36:40","date_gmt":"2020-03-08T15:36:40","guid":{"rendered":"https:\/\/neishalovesit.blog\/keto-caramel-candy-the-ketonist\/"},"modified":"2020-03-08T15:36:40","modified_gmt":"2020-03-08T15:36:40","slug":"keto-caramel-candy-the-ketonist","status":"publish","type":"post","link":"https:\/\/neishalovesit.blog\/?p=3204","title":{"rendered":"Keto Caramel Candy | The Ketonist"},"content":{"rendered":"<div style=\"margin-top: 0px; margin-bottom: 0px;\" class=\"sharethis-inline-share-buttons\" ><\/div>\n<p>I\u2019m so thankful that Kim Howerton made this recipe!!!!<\/p>\n\n\n\n<p>Ingredients<br \/>Caramel-<br \/>1\/2 c Butter (I use Salted!)<br \/>2 T Swerve Brown Sugar (can use more if like sweeter!)<br \/>1\/2 to 1 cup Heavy Whipping Cream<br \/>Optional: Pinch Salt (I use Redmonds!)<\/p>\n\n\n\n<p>For Turtles<br \/>Caramel (above)<br \/>2 oz Keto Friendly or Unsweetened Chocolate<br \/>1-2 T Butter<br \/>4-8 oz Pecans (roasted tastes best!)<br \/>Optional: Large Salt for sprinkling over top<\/p>\n\n\n\n<p>For Black Walnut Fudge<br \/>Caramel (above)&nbsp;<br \/>4-8 oz Chopped Black Walnuts (or nut of choice)<br \/>Optional: Large Salt for sprinkling over top<\/p>\n\n\n\n<p>Make the Caramel:<br \/>Melt the butter in a medium saucepan on medium heat and cook, until browned. It\u2019ll froth, so stir or shake to see color underneath.&nbsp; CHECK IT regularly, so it doesn\u2019t go to fully burned! This takes about 4-5 minutes.&nbsp;<br \/>You want it amber brown, not coffee ground brown.&nbsp;<\/p>\n\n\n\n<p>Then add the Swerve and mix in well. Then add the cream. Honestly it works well with anything from 1\/2 c to 1 c cream.&nbsp;<br \/>Let come to a high simmer, not a boil. You\u2019ll see lots of small bubbles. Let cook until it gets darker and thicker and the surface gets sort of glossy. It\u2019ll move past the look of a liquid. It should be thick when you stir it.&nbsp;<\/p>\n\n\n\n<p>Take off the heat.<\/p>\n\n\n\n<p>For Turtles:<br \/>Lay out pecans on wax paper or parchment paper on a dish that will fit in your fridge. Drizzle Caramel over the top to bind them into individual turtles. Pop in fridge too chill.&nbsp;<\/p>\n\n\n\n<p>In a saucepan on medium low heat slowly heat chocolate* with 1 T butter, add another T if need to thin more. Heat just until chocolate melted.&nbsp;<\/p>\n\n\n\n<p>Take Turtles out of the fridge, and drizzle melted chocolate over top to suit you.&nbsp; Sprinkle with salt while chocolate still wet, if using.<\/p>\n\n\n\n<p>Pop back in the fridge for 1-2 hours to firm. Store covered, in fridge.&nbsp;<\/p>\n\n\n\n<p>*Neisha and I used a bar of Lily\u2019s Dark Chocolate. At home I use a nice Unsweetened Chocolate like Scharffenberger or Ghiradelli.&nbsp;<\/p>\n\n\n\n<p>Black Walnut Fudge<\/p>\n\n\n\n<p>Pour chopped nuts into warm caramel in saucepan. Use less or more depending on your tastes.&nbsp;<br \/>Pour out onto plate covered in parchment or wax paper. Flatten to desired thickness. Sprinkle with salt, if using. Put into fridge for 2-3 hours to firm. Cut into squares, and store in fridge.&nbsp;<\/p>\n\n\n\n<p>Feel free to drizzle with chocolate if desired!<\/p>\n\n\n\n<p>FYI: if you use Confectioner\u2019s Swerve (not the brown sugar kind) and add 1\/2 tsp vanilla to the mix, you can make vanilla fudge. <\/p>\n","protected":false},"excerpt":{"rendered":"<p>I\u2019m so thankful that Kim Howerton made this recipe!!!!
