Keto Chicken Salad is a big Berry favorite. We love chicken salad, but making it with thighs instead of breasts REALLY was a game changer. Thighs taste better and have more fat on them. We use all the meat, the skin and the cartilage in our recipe. Keto mayo can be bought or made very easily. 8 chicken thighs BONE IN, SKIN ON
1/2 cup keto mayo ( find my recipe below or buy PRIMAL KITCHEN Mayo here : https://amzn.to/3ivYIub
1/2 cup dill pickles chopped
1/2 cup onion chopped
( you can add more or less to taste, not everyone likes onion or it can be too carb heavy for some. )
3 heaping tsp. of minced garlic ( again to taste, you could also sub garlic powder to taste)
Boil thighs till meat falls of the bone ( 2 hr on medium high heat )
I add 3 tbsp of Redmonds Real Salt to the water while they boil.
While chicken boils Prep :
1/2 cup of dill pickles chopped
1/2 cup onions chopped
3 tsp minced garlic
After chicken is done pull off the skin, meat, and cartilage and add to bowl.
Add in 1/2 cup of keto mayo, pickles, onions, garlic, and salt and pepper to taste.
Let chill and enjoy !!!
